As a long standing partner of the James Bond films, Champagne house Bollinger has commemorated the forthcoming release of SPECTRE with a special 007 limited edition of its 2009 vintage.
This Champagne was aged for 6 years in old oak barrels, twice as long as the stipulated by law and it shows in the deep golden colour.

After bottling, the second fermentation and slow maturation in the cellars occur under natural cork. This preserves the freshness of the wines while protecting them against oxidation.
On the palate this 2009 Vintage has white flowers, citrus fruits and stewed pear with hints of vanilla, breadcrumbs and toasted aromas. It shows good maturity yet remains quite brisk and lively and has a lengthy finish that reminds us of bitter orange.

I have never tasted Bollinger Champagne and I live here in the United States. One of these days, I’m going to buy me a bottle and sit down and have myself a James Bond marathon.
